Homemade Green Curry Paste Recipe
Homemade Green Curry Paste Recipe:
*Highly recommend to use Twister Jar
Ingredients:
(Make 5 tablespoons for 5 serves, usually I adjust this recipe x 2 and kept in the refrigerator)
* tbsp = tablespoon * tsp = teaspoon
Herbs&Chillies:
2 stalks (inner tender flesh only) - chopped FRESH or frozen #lemongrass, please don't use dried ones
2 tsp - #Galangal , fresh or frozen both great
1/2 tsp - Kaffir lime rind (OR Kaffir lime leaves 2pcs w/o stalk) #kaffirlime
1/4 cup - Garlic, just peel no need to chop
3 tbsp - Shallot, just peel no need to chop
1 Coriander root - try to find bigger root, if not double the amount #corianderroot
10 Small green hot chilies
5 Green Jalapeño chilies - seeded
Dry Ingredients:
2 tsp - Coriander seeds #corianderseeds
1/2 tsp - Cumin powder
1/4 tsp - Black pepper seeds
Seasonings:
1 tsp - Salt
1 tsp - Shrimp paste
Last Ingredient: (VERY IMPORTANT, trust me!)
2 tsp - Turmeric Powder (it will color your jar, so just blend other ingredients first then mix in later in bowl)
Methods:
1. Blend Dry Ingredients into fine powder (Don't put in Turmeric Powder yet)
2. Add in Herbs&Chillies + Seasonings then blend into paste
3. Remove paste from the jar into a bowl
4. Add Last Ingredient mix everything together
